  1. Cut the chicken breasts into 8 pieces.
  2. Add the flour, salt, and pepper to a ziplock bag. Zip it shut and shake to distribute seasonings evenly.
  3. Now add the chicken pieces and shake thoroughly to coat them on all sides.
  4. Add the butter and olive oil to a heavy skillet at a medium high temperature.
  5. Cook the chicken for about 3-4 minutes on each side. They should be a light golden brown.
  6. Transfer the chicken to a serving platter or large plate.
Lemon Wine Sauce
  1. Mince the garlic and zest the lemons.
  2. Cut the lemons in half and squeeze the juice into a small bowl.
  3. Add the butter and olive oil to the skillet along with the garlic and shallots. Saute at a medium heat for about 3 minutes.
  4. Add tarragon, lemon juice and zest, and white wine, stirring as it cooks over a medium heat for about 5 minutes. The mixture should be reduced by about a third.
  5. Turn the heat to a low setting and add the chicken back to the skillet. Cook for about 2 to 3 minutes.
  6. Divide the chicken onto two plates and spoon the sauce over it.
