  1. Add the olive oil to a large, heavy skillet over a medium-high setting.
  2. Once the oil is heated, add the onions, garlic and ginger and sauté for a few minutes until the onions are a light golden brown.
  3. Add the turmeric, cumin, coriander, garam masala, and red chili to the pan and continue to sauté, stirring constantly, for 2-3 minutes. The spices should become very fragrant.
  4. Now add the chicken thighs, and cook in the spices until they are golden brown and almost done.
  5. Add the lemon and orange juices, stirring into the pan to incorporate all the cooking juices and any delicious brown bits.
  6. Let the liquid come to a boil, then turn down to a medium-low setting. Cover and simmer for 20 to 30 minutes, until the chicken is very tender and almost falling off the bone, stirring occasionally.
  7. Remove chicken and arrange on serving platter.
  8. Add yogurt to the sauce and stir together until thoroughly heated. Serve over the chicken.
