  1. Season the meat with salt, pepper, and paprika. Rub with olive oil.
  2. Place a layer of thin lemon slices, garlic, scallions, and bay leaves in a glass baking dish. Place the steak in the dish, and cover with the remaining lemon slices, scallions, bay leaves, and garlic.
  3. Cover the dish with foil refrigerate for 24 hours.
  4. When you’re ready, heat the grill and brush it with vegetable oil.
  5. Remove seasonings and season the steak with a little more salt and pepper.
  6. Grill over a medium high heat for about 3 to 5 minutes per side. Squeeze lemon juice on it as it cooks. The meat should still be pink in the middle.
  7. If you have made a whole flat iron steak, allow it to rest on a rack for about 5 minutes before cutting into slices against the grain.
Recipe Notes

Note: Use one whole flat iron steak, also called a Butler steak, for a classic steak frites. You can also use four top blade chuck steaks
