  1. Heat the oven to 375°F.
  2. Brush the inside of a small baking dish with olive oil.
  3. In a bowl, add the ricotta, lemon juice and zest, Dijon, thyme, and rosemary. Blend together thoroughly, and season with black pepper and cayenne pepper to taste.
  4. Spoon the mixture into the baking dish and bake for about 15 to 20 minutes. The edges of the cheese should be bubbly.
  5. Transfer the ricotta to a serving dish, and sprinkle with a little black pepper to garnish.
  6. Serve with toasted bread or veggies.
