Curd:
  1. Add the lemon juice, sugar, and eggs to a saucepan over a medium-low setting.
  2. Cook, stirring, until the sugar has dissolved. Add the butter, continuing to stir.
  3. Cook at a low setting for 6 to 8 minutes, as the curd thickens. It should coat the back of your spoon.
  4. Once it begins to bubble, cook for only about a minute longer.
  5. Stir in lemon zest, and remove from heat. Place in a glass dish and cover with plastic wrap, taking care to cover the whole surface to avoid creating a skin. Refrigerate for about 1 hour.
Vanilla Cream Topping:
  1. Add the cream cheese to a small bowl and whisk or use a mixer to whip until the texture is light and fluffy. Add the icing sugar and vanilla as you continue to beat for another minute or so.
  2. In another bowl, whip the cream until soft peaks form. Fold the whipped cream into the cream cheese mixture.
Assemble:
  1. Divide the lemon curd in half. Now, divide it evenly between four parfait or stemless wine glasses, or drinking jars.
  2. Repeat the same procedure with the vanilla cream.
  3. Now, top with the remaining lemon curd, and then the last of the vanilla cream, so that each parfait has four layers – two of lemon curd, and two of vanilla cream.
  4. Garnish with lemon slices or sprigs of mint.
  5. Refrigerate until ready to serve.
