  1. Slice one jalapeno pepper into thin rings. Chop the other into pieces as small as you can, so that it will mix with all the ingredients.
  2. Use a sharp knife to cut the Star Ruby grapefruit and orange into segments over a bowl, releasing the flesh and juice into the bowl. Chop the fruit into small chunks.
  3. Add the champagne vinegar and olive oil. Swish the mixture around gently.
  4. Add the remaining ingredients and stir gently.
  5. Add pepper to taste.
