Marinade
  1. Mince the jalapeno pepper, garlic close, and ginger together in a large glass dish.
  2. Add the Star Ruby grapefruit juice and stir.
  3. Chop the cilantro leaves as finely as you can. Add to the mixture and stir.
  4. Now pour in the olive oil little by little, blending thoroughly.
  5. Add salt and pepper to taste.
  6. Score the flank steak in both directions against the grain. You should end up with a criss cross pattern.
  7. Add the meat to the glass dish and coat on all sides with marinade.
  8. Cover and marinade at least 4 hours, or over night.
To Grill
  1. When the meat is ready, heat the grill, whether charcoal or gas, to a medium high setting.
  2. Grill the meat about 5 to 7 minutes on either side, depending on thickness. It should be pink in the middle (medium rare or medium at best).
  3. Remove from heat and slice against the grain.
