  1. Add the eggs, egg yolks, and grapefruit zest to a bowl. Whisk together thoroughly.
  2. Add the sugar, salt, and grapefruit juice - it should be about 1 cup - to a saucepan and bring to a simmer over a medium setting, stirring constantly. Cook for about 2 minutes.
  3. Pour a little of the juice mixture - about 1/2 cup - into the egg mixture as you whisk it together (to avoid cooking the eggs).
  4. Now add the whole egg mixture to the juice in the saucepan, still whisking constantly.
  5. Continue to cook and allow the curd to come to a boil for about 5 minutes. It should be thickened.
  6. Remove from the heat when it's the right consistency and add the cold butter.
  7. Whisk together until the mixture is thoroughly combined.
  8. Spoon the mixture into a dish and cover with plastic wrap. The wrap should touch the entire surface of the curd to avoid creating a skin.
  9. Refrigerate. It will be ready to use once it is cooled completely, about 2 to 3 hours.
