  1. Cut the peel and as much of the white pith as you can from the Star Ruby grapefruits and oranges as you can.
  2. Cut the fruits into rounds about 1/2-inch thick. Transfer to a medium sized bowl and add the kumquats, lemon juice, orange-flower water, and salt.
  3. Toss the ingredients together to mix thoroughly, and let it sit for about 5 minutes. The citrus fruits will begin to release their juices.
  4. Use a slotted spoon to transfer the fruit to a large plate, leaving the juice in the bowl.
  5. Add the avocado pieces to the citrus fruit, arranging them on the plate.
  6. Add lemon juice to the other citrus juices in the original bowl. Now, add the ground ginger, and honey to the bowl with the fruit juices. Mix thoroughly to make the vinaigrette and pour immediately over the salad.
  7. Top with tarragon leaves and pistachios, and drizzle with a little olive oil.
