  1. Heat oven to 450°F. Line a baking sheet with foil.
  2. Place salmon on the foil, skin side down, and drizzle with a little olive oil. Season with salt and pepper to taste.
  3. Bake the salmon until cooked thoroughly, about 10 to 15 minutes depending on thickness.
  4. Allow the salmon to cool to room temperature.
  5. While you're waiting for the salmon, use a sharp knife to peel the grapefruits, taking care to remove as much of the white pith as possible. Peel them over a bowl to catch any juice that escapes.
  6. Now, cut into the membranes to release the fruit into the bowl.
  7. Take 2 tablespoons of the grapefruit juice from the bowl and add it to a second bowl.
  8. Mince the shallot.
  9. Add the vinegar, mustard, and about 1/2 teaspoon salt to the separated grapefruit juice. Whisk together.
  10. Continue to whisk the dressing as you add the 3 tablespoons of olive oil drop by drop.
  11. Add the sesame seeds to a skillet over a medium high setting and toast them, stirring frequently to toast evenly, for about 3 to 5 minutes.
  12. Wash watercress, and trim the stems. Shred it into pieces.
  13. Cut the avocado in half and remove the pit. Cut the flesh into bite sized pieces.
  14. To assemble the salad, begin with the watercress, arranging it in an even layer on a platter.
  15. Cut the salmon into small pieces, and arrange on the watercress.
  16. Add the grapefruit pieces and avocado.
  17. Drizzle with the dressing.
  18. Finish by topping it with the toasted sesame seeds.
