  1. Peel the Star Ruby grapefruits, taking away as much of the white pith as you can with a sharp knife.
  2. Cut the segments out of the membranes and into a bowl and then chop into bite-size pieces. Squeeze in any extra juice from the membranes.
  3. Add the minced pepper, chili, onions, basil, and honey to the bowl. Mix together.
  4. Combine the line juice and 1 tablespoon olive oil in a small separate bowl. Stir together thoroughly, and pour over the grapefruit mixture.
  5. Cover and refrigerate for at least 4 hours.
  6. When the salsa is ready, take it out of the fridge to warm to room temperature as you make the fish.
  7. Heat the oven to 450 degrees F.
  8. Brush the fish fillets with olive oil and sprinkle with salt and pepper to taste.
  9. Roast the fish on a baking sheet for about 10 to 12 minutes, until cooked thoroughly.
  10. Serve immediately, with the salsa spooned over the fish.
Recipe Notes

Note: The salsa needs to refrigerate for about 4 hours at least. You can also make it the night before for a quick dinner the next day – just roast the fish and you’re done.
